Michelin Star cooking

So there are no Michelin star restaurants in Uganda, or South Sudan for that matter. In the settlement, food is survival, not pleasure. And I take this challenging reality seriously. But that doesn’t mean I can’t try and have a little fun. Last time I was here I made jelly. No-one had any idea what it was, but all loved it. The challenge is it has to be easy to make, easy to find any additional ingredients required, and ideally light to carry (luggage is really for priority items and a few clothes). So this time, it was Angel Delight. Yup, you can still buy it!
Strawberry, Banana and Chocolate were easy to get, but Butterscotch was more difficult to explain. And the logistics were sub-optimal; the ‘stuff’ was too heavy/dense for the cup-cake paper moulds, so presentation was not ideal.
However, once again it was a massive hit! Clare (pictured) had three. I have been asked to make it again, so fortunately have a couple of packets left. And for the avoidance of doubt, I was not saving it for myself!
